Keto Chorizo prawns & zoodles

Ingredients

I used to make this recipe with spaghetti but absolutely loving this LCHF variation with added prawns & zoodles

Preheat oven to 190 degrees and prepare a large baking dish and add:

Cherry tomatoes left whole
Chorizo – sliced
Red Capsicum – sliced
Yellow Capsicum- sliced
1 red onion – sliced
Extra virgin oilve oil
Salt and Pepper
4 cloves garlic – smashed
Chilli flakes (optional)

Bake in oven for 25 mins stirring once half way through

Meanwhile – prepare zoodles with 1 large zucchini

After 25 minutes add to baking dish:

Prawns (peeled and de veined) – (optional, omit if you don’t like seafood) – cook in oven for 5 minutes

Then stir through:
Zoodles
Basil leaves
Zest of 1 lemon
Juice of 1 lemon
Another generous splash of extra virgin olive oil
Salt + Pepper to taste

Option to serve with parmesan shavings
